Healthy Fried Rice

Good Tuesday Morning to you my friends!

I have to get up and at it early this morning because Staycation Day #2 starts soon. We are headed to Fossil Rim today, which is an outdoor Safari Park. You get to drive your car around while seeing all kinds of exotic animals and even feeding them, too!. I think it will make for a crazy, fun day and I know the kids will LOVE it!

Yesterday we did a little bowling which was a good time. I did however, confirm to myself and any others who may have been watching that I am quite possibly the world’s worst bowler. Okay…maybe not THAT bad but it wasn’t pretty!! My kids on the other hand were fantastic with the help of some bumpers and definitely the cutest little bowlers ever!

I had every intentions of sharing my Healthy Fried Rice recipe with y’all last week but it seems it slipped my mind. What better time to share than now. What is the saying…, “Better late than never”!

I do want to state that with this recipe, I really don’t use exact measurements. I kind of eye-ball it so the amounts listed are all approximates.



  • 2-3 cups, already cooked and cold brown rice(if it is not cold, it will stick and not have the correct texture)
  • 1/4 to 1/2 cup frozen corn
  • 1/4 to 1/2 cup frozen peas
  • 1/4 cup chopped baby carrots
  • 1/4 cup onion, chopped
  • 2 eggs
  • 2-3 TBSP reduced sodium soy sauce
  • 1 TBSP olive oil


  • Heat olive oil in large non- stick  skillet or wok over medium high heat and add veggies to soften.
  • Once veggie have softened, stir in brown rice and combine, heating through.
  • Pour soy sauce over the rice and veggie mixture, stirring to mix thoroughly.
  • Push rice mixture to one side of pan. Crack eggs onto the other side of skillet and scramble.
  • When eggs are done, incorporate into rice mixture, stirring to combine.

This is one of my favorite quick and easy go-to meals and works really well on nights you have forgotten to take out anything for dinner or just want to get it done quickly but still serve the family something delicious. This can easily be adapted to add your favorite meat as well. Shrimp, chicken or steak would all make wonderful additions. Maybe even all three at once. 🙂

Who needs take out when you can whip this up instead!!

  1. How funny that you all went bowling yesterday. Hubby and i did too.. and ehh we are not good either. I do get over 100, but maybe by 5 or 10 cones. Even though we are awful, it’s always such a fun time!
