Pizza Party

Goodness, I am feeling a bit hungover this morning. Kind of amazing since I didn’t let one drop of alcohol hit my lips last night. Nope, instead I am feeling hungover from indulging a bit too much in delicious food.

Ahhhhh, I tell ya, my will power sucks at times!!!!

Last night, we went to Chris and Brandi’s house for his 21st, errr 41st birthday celebration. I made him practice some before and after shots!!

As always, there was lots of good food served last night. Chris and Brandi have never been known for serving too little food and last night was no exception. I went in with a plan to have one, maybe two pieces of pizza and a bite of cake. Ha…..yeah right!!!!

This is just a sample of the many pizzas. There was sure to be something for everyone, a true pizza buffet!!  They had combination, pepperoni, cheese, ham and pineapple, meat lovers, and an onion and mushroom. Yum!!!

I did manage to stick with two pieces of pizza but only because I had plucked a couple boxes of Milk Duds out of this bowl beforehand.

Milk Duds are my FAVORITE and I would be in big trouble if I kept a big ol’ bowl like this around me all the time. Seriously, I have no willpower when it comes to candy so I just cannot have it in the house. You can guarantee I will not buy Halloween candy until a couple days before because if I did there would be little left for the trick or treaters.

Thankfully, there was a little time between the pizza and dessert to let my stomach settle. Not that it would have mattered. I am sure I would of dug in anyway ;-).

Maddi, Chris and Brandi’s 15 year old daughter was in charge of making the cake and she did a fabulous jobs!!! Check out the three tier Oreo cake!!!

Yes, it tasted just as good as it looked!!! The chocolate cake was nice and moist and while the icing was delicious, it was also super rich!! I was informed that it contained TWO pounds of confectioners sugar and 25 Oreos. OH MY!!!!

But that wasn’t all. There was also an assortment of cheesecake!! No way could I pass on a piece of that!!!

Choosing between the two desserts was like picking a favorite child(I couldn’t do it!!!) so I did what any smart person would do and grabbed a bit of both!!! I did manage to keep my pieces small, even halving the cheesecake and like I said, the Oreo cake was rich so I wasn’t able to finish all the frosting.

I know it looks like all I did was eat but I promise, there was more to the night than that!! There was a little talking, dancing and picture taking going on, too :-)!! We were the lame-o’s who left the party first but hey, we had a set of sleepy kids AND the hubs had to be up early for work this morning so we called it a pretty early night.



Just to keep you updated on the running schedule, here is what yesterday’s workout looked like:

Total: 30 minutes

  • Run 13 minutes
  • Walk one minute
  • Run 13 minutes
  • Walk 3 minutes to cool down

A Little Pre-Halloween Fun

Look at me, blogging on a Saturday!!! I figured, what the hey. It is a rainy and dreary morning and since I am 99% sure that cheer is going to be cancelled today, that gives me a little more time to be lazy before I have to start tackling my errands for the day.

One of the errands will be taking my kids around to pick out their Halloween costumes. So much fun!!! Of course, not as fun as when they were babies and I got to decide what they were going to be.

I realize it isn’t even October yet BUT if you don’t get them early they get picked over and you are stuck with something you only kind of like. There is definitely no fun in that!!

To get in the spirit, I thought I would share some of our past Halloween costumes!!

These days you can be sure they are going to pick super hero’s and popular Disney characters. Not as much fun for me but I remember being a and kid how excited I was to get that same costume that 100 others kids were going to be wearing….ha!!!

 I have to post a picture of my husband getting into the spirit a few years back. This was great because he usually isn’t the kind that likes to dress up, unless I make him. I think I did a pretty good job of convincing him!!

Last year, we were on a Bud Light Cruise a couple days before Halloween so of course, they had a dress up theme one night. It was SUCH a great time and yes, our costumes were LAME compared to many of the creative costumes.

Can you even tell we were supposed to be pirates?!

Speaking of creative costumes, I thought I would post some that really give me a giggle. While I enjoy Halloween and think it is a great time to be creative and fun, some people REALLY get into. Props to them!!!!

Well it looks like the odds were not in our favor!  I just got the call that cheer has NOT been cancelled so that means I have to get a move on!!! Hope you have a wonderful Saturday!!!

Pulled Pork Stuffed Sweet Potato

Did anyone else catch the season premiere of Grey’s Anatomy last night? Ugh…..the tears flowed!!! I don’t want to give any spoilers in case you are the DVR and watch it later type(like I usually am) but it certainly wasn’t the premiere I was hoping for. Don’t get me wrong, it was good, REALLY good but I am gonna be sad to see one of my favorite characters gone :-(.

It is funny because last season, I swore up and down I would NEVER watch it again after the way the finale ended but obviously that was quite the empty threat. At the time though, I truly meant it. It is funny how we can get so emotionally invested in a television show and characters that come into our living rooms once a week.

Sooooo, looks like I will be watching it but I am still steaming a little bit over the loss of Lexie……which I will have to re-live in next weeks episode. I will prepare myself for many more tears!!!


Last week when I was browsing through Pinterest, I saw a picture that made me stop dead in my tracks and lick my lips!!! Yea, I like to be dramatic like that, sometimes ;-). But really, the baked sweet potato that was stuffed with pulled pork definitely caught my attention!!

Last night, I re-created that meal, though my picture doesn’t look nearly as pretty as the one on Pinterest did. Thankfully, we aren’t having a photo contest, however, a pulled pork cooking contest…… I feel for sure I would have taken the trophy on that one. Yep, it is just that good!!!

I used my favorite pulled pork recipe as the topping for my sweet potatoes. This is simply one of the best tasting and easiest recipes you will ever make. I have made this for company several times and I have never received anything but rave reviews. You know they like it when they go back for seconds and yes, even thirds!!! I blogged about this dish before but since I didn’t include an actual recipe last time I figured I would remedy that now. 🙂

This is the kind of recipe you make if you aren’t really a cook but you want to trick people into thinking you are!!

Crock-pot Pulled Pork

Check out the short ingredient list:

  • Boneless country style pork ribs(I used one package but double to feed more)
  • One can or bottle of beer
  • Salt and pepper to taste
  • Barbeque sauce


  • Place ribs in crock-pot, cover with beer and season with salt and pepper.
  • Cook on high 5-6 hours or low for 3-4 hours, depending on how quickly your crock-pot cooks.
  • Once pork is done, remove from crock-pot and shred with two forks.
  • While you are shredding pork, heat oven to 375 degrees.
  • Place shredded pork in a dutch oven or oven proof pan and coat with barbeque sauce.
  • Cook pulled pork in the oven, uncovered for 20-30 minutes, until the sauce begins to get a little sticky.

*You can skip the oven step but it really does make this dish. It allows the BBQ flavor to really mix into the pork. It also makes the BBQ sauce become slightly sticky and the tips of the pork to brown and get slightly crunchy. Mmmmm, my favorite part!!!

In my hurry to chow down I forgot to snap a picture of the finished product all covered in yummy sauce. Just because I want you to get the full effect of this incredible dish, I am going to use a recycled photo. You’re okay with that, right?!

You may prefer to cook your sweet potatoes in the oven but since I am impatient, I tend to just nuke them. I have discovered a way to make them in the microwave where they come out soft and moist, not hard and dry.

Here is my tip: Poke holes in the potato with a fork or knife. Place the potatoes in a microwavable safe dish with about 1 inch of water. Cook potatoes for approximately six minutes though you may want to check them around four minutes just to be safe.

Once the potatoes are cooked, slice open and top with the pork mixture!!!

The combination of flavors in this is just the best!!!! The sweetness of the potato combined with the smokey spice of the pulled pork. Lip smacking good!!!

Color In Motion 5K

Howdy friends!!!

I am extra excited about today’s post and I really hope you will be, too!!

You how how I have gotten into this running thing lately, even signing up for my first 5K in two years?! Scratch that, because it looks like I will be running TWO 5K’s this Fall. The opportunity couldn’t come at a better time because Fall + Me= perfect running weather!!!!

Color In Motion 5K- Dallas, Texas

If you have run in a race before you know that they can be really fun! Just having a crowd of like-minded people together,  partaking in something they enjoy makes for a great time!! The pumped up feeling I get before a race is always my favorite part followed closely by all the yummy snacks after the race. However, the in between parts are sometimes just so-so…….

Unless of course, it is the Color In Motion 5K. Just check out this picture and tell me how that could ever be boring!!!

Exactly what is Color In Motion?

Color in Motion 5k organizes 5k’s across the country that have a surprise at every kilometer; COLOR!

The difference between these 5k’s and other 5k’s is that they jazz the race (and the racers!) up with bursts of color. You start out all fresh and clean in your white t-shirt, and by the end of the race you are covered in vibrant colorful camouflage.

Color in Motion 5k is coming to Dallas on November 17th, 2012. A portion of all registration fees will be donated to the Make-a-Wish Foundation.

I love it! A laid back casual atmosphere where you can slow down the pace(if you wanna ;-)) and worry more about how to look like a human rainbow rather than how quickly you can cross the finish line. Hey, at least that is the greatness of it for slowpokes like me!!

WIAW #15 = Semi Couch to 5K

Hi y’all!!!

Let’s get started with talk about yesterday’s workout.

  • Non-Existent. Oops!!

I had every intention of getting in a strength training workout but I ended up skipping. It isn’t my proudest moment but I am not going to sit here and make excuses. I was lazy. There is no other way to put it.

I guess it’s a good thing I will be heading out for Day 2 of the “Semi-Couch to 5K” I am doing to get race ready. I am calling it “Semi C25K” because my fitness level is beyond the ever popular C25K plans out there. They definitely work for very beginner runners  and I know this because I was one of them several years ago. I went from having a newborn baby to running a 5K with a fairly decent time in just under a few months. For new runners, I highly recommend the Couch to 5K program to get you out the door and hitting the pavement.

But like I said, I am a bit beyond that now and can run a couple miles before my asthma starts to kick in and makes me feel like I am getting kicked in the chest. Ha!! I am actually kidding, it isn’t that bad but the two mile mark is pretty hard to push past without a walking break at this point. I know the steep hills in my neighborhood are doing me no favors!!!

After digging around on runner forums and googling 5K plans, this is what I have come up with.

What I Ate Wednesday

Since I just started counting calories, I had to make sure I didn’t get too heavy handed with my meals today. Normally when I start tracking my food, by the 2nd day, I am starving and wanting everything that I shouldn’t have. Even though I did have a couple rumbles in my tummy throughout the day, I think I did a pretty good job at making choices that were filling but also allowed me to feel like I wasn’t “dieting”.

Breakfast was a bowl of peanut butter Puffins and 1/2 sliced banana. I also had a delicious cup of pumpkin spice coffee.

Morning Snack: A sliced green apple with PB2. I think PB2 is a great substitute for peanut butter but it really is best used in baking and flavoring things. I really did enjoy this little snack but come on’, there is NO replacement for the real stuff!!

Lunch: I made a veggie burger, topped it with a tablespoon of hummus and placed it on a bed of leftover quinoa from last nights dinner. This made for a filling meal that tasted really good, too!!

 While out on a quick shopping trip, I came across this amazing bag of granola.

Take a couple guesses as to what store I found this at? Go ahead……..

TJ MAXX!!!! Really?! I have heard so many wonderful things about this granola from other bloggers but had never had the chance to try it. I have never seen it at my local grocery stores but who needs those when you can shop for food at places like TJ Maxx…ha!!

Afternoon Snack: You better believe this made its way onto the top of some black cherry greek yogurt. Yum….I see what all the fuss is about!!

Dinner: Black bean and avocado quesadillas. This is a recycled photo but what the heck, it looks just like it always does. This has become an easy favorite in our house lately and I am all for it. Mmmmmmmm!!!

I can’t get out of here without thanking Jenn at Peas and Crayons for allowing me to be apart of another great week of WIAW!!!!
