Batch Cooking and Healthy Parmesan Patties

How’s it going this Monday? I can’t complain over here!!

Today starts Spring Break for my kids but we are using today as a “relax” day. Today is the only chilly day out of the entire week so it worked out perfectly for staying home. The rest of the week will be in the 70’s and 80’s so I plan to spend many hours outdoors. I just LOVE Spring!! Now that we have “Sprung forward”, it really feels like Spring time. I couldn’t help but smile when I looked at the clock at 7:00pm last night and the sun was still shining bright.

Now, I just have to hope that the weather is mild this season and does not bring any dreaded tornadoes to our area!!

Weekend Fun

My weekend fun consisted of batch cooking up a large amount of food for Lance and I to have for breakfast and lunch this week.

  • Quinoa
  • Ground Turkey
  • Mixed veggies
  • Egg Muffin Cups
  • Oatmeal Muffin Cups
  • Brownie Protein Bars

All of that prepping and cooking took a good 2.5 hours but it will make the rest of the week a breeze, at least I hope so!! However, next week I think I will be a bit smarter and just make double or triple of what we have for dinner next Sunday night. Doh!! Why didn’t I think of that sooner. 😉

Last night’s dinner was phenomenal and I have to give all credit to Courtney at Sweet Tooth Sweet Life because it was her recipe, with a few very minor changes.

Healthy Parmesan Burgers(or patties in my case)

Last weekend we happened to be at a new to us store and they had ground chicken breast for a great price. I am always leery of anything ground, unless it is beef or turkey. However, I remembered seeing this recipe on Courtney’s blog at an earlier time and thought this would be the perfect time to make it.

I did make a few substitutions because there were some items I was missing in my cupboard but it was no big deal and worked out perfectly. I didn’t have buns on hand but that was no biggie. I just whipped up a side of Roasted Ranch Red Potatoes as our carb.  Also, I didn’t have any marinara sauce in my cabinets but I did have an awesome supply of canned tomato products from Red Gold. Last month they sent me some of their products to try out and boy are they good!!

Mission Accomplished, Red Gold!!!

Last night, I used a can of Red Gold diced tomatoes with basil, garlic and oregano seasoning as my marinara sauce.

I just emptied the can into my Ninja, pulsed for a few seconds and had a delicious sauce. It was so fresh tasting and I actually liked it even more than traditional spaghetti sauce!!

My family gobbled up this dinner and my husband requested that it be put into regular rotation. No problem, honey!! I got you covered on that one 🙂

Workout

  • Today’s workout consisted of a nice upper body workout(chest and triceps done circuit style) that left my arms nice and wobbly. It isn’t a plan I can share because I got the workout from a program that was actually purchased. It is part of a 6 week at home workout guide. It is going to be perfect for me because the workouts are broken up into 5 days of training per week. 3 workouts are weight based and the other 2 workouts are HIIT based. The best part: each routine can be done in 20-30 minutes. Of course, that means you really have to push and give it your all to see results but I am cool with that!!
  • 2 miles on the gym treadmill. I was able to get my kids to the gym(and to behave while I was there) for a quick 20 minute cardio workout. Cardio is not my fave but it is essential right now because I am pretty serious about getting 5-10 pounds off my frame. Once I reach my goal, I will cut back on the cardio and just do the 2 days in the 6 week workout plan.

I have mentioned my friend before because I truly believe in the workouts/cookbooks/e-books that she offers. Anyhoo, if you are stuck in a rut or just want to change up your workouts and start seeing results(at home OR the gym) you should visit Kyra at The Get In Shape Girl!!

Friday Favorites

Whew, this has been one busy week for me!! I feel like it has been endless days of Christmas shopping, cleaning and just trying to stay on top of everything. Of course, I did manage to have lots of fun while doing it all but I am quite ready for the weekend! How about you?

Since my days have been kind of random this week, without lots of pictures and with scattered workouts I thought it might be fun to do a Friday Favorite Roundup and share what I am digging this week.

Smiles

This is Liam with his friend, Alaina. She has been going through treatment for Leukemia for the last 1.5 years and is quite the trooper. Look at that cute smile AND all that hair! She has just been able to start growing hair back within the last couple months. She’s a cutie, right!! And of course, so is my Liam :-).

Sweet Treat

I’ve been helping myself to one, or two….okay, maybe three per night and they are the perfect after dinner treat!!

Song

The Voice is one of my very favorite shows right now and Cassadee Pope is who I am rooting for to win. She is just phenomenal to me and this song is a big reason for it. Every time I hear her sing this I get a bit emotional. It reminds me of the people I have love and lost and she just sings is so beautifully!

Quick Workouts

Like I said before, this week has been crazy busy which means that my works outs have not been top notch. However, rather than do nothing I like to put together circuits that I can do at home in 10-15 minutes. If I find extra time in my day, I can always repeat them to get a little extra burn!

Humor

Fred is our “Elf” and no, he is not my favorite. Far from it, really. What is my favorite is this HILARIOUS article written about “Elf on the Shelf” and overachieving mom’s. Read it, you will laugh…I promise!!

Fall Wish List

Hey y’all!! I hope everyone had a really nice Labor Day!! It was pretty relaxed around my house. We did end up going to my friend Brandi’s house for a couple hours for some swim time and hanging out. Before that, I hit the gym to try out a new circuit I put together. Let’s just say it was a good one and left my whooped the rest of the day. I can definitely tell I had not been putting full effort into my workouts the last month or so. Oops!!

Before heading to the gym I tried a new to me breakfast…..peanut butter and banana quesadilla. Oh my, it was so DELICIOUS I may have to eat another one today!!

After letting my breakfast settle I headed to the gym to get my workout on!

This is a great circuit for a home or gym workout. Just make sure you lift as heavy as you can with proper form!!

Dinner was pretty darn good up in my house last night! We may not have had an official Labor Day BBQ but we did fire up the grill. Teriyaki Chicken, honey roasted corn(from the frozen section) and green beans made my belly happy.

Last week I found out that my son will be in class with a child that has a peanut allergy. Darn…..no more PB & J’s which was his staple sandwich for school days.  This has forced me to get creative and come up with some other lunch options instead. Good thing I remembered the blueberry oat muffins that I made a couple weeks ago. My kids devoured them within days and the best part, they were super healthy!! I made some changes from the original recipe this time and I think they came out even better!!

This time I used the following variations:

  • vanilla yogurt instead of lemon
  • coconut oil instead of canola
  • I also added half a very ripe banana for extra moistness

I will add some fruit, yogurt and carrot sticks and my kids will have a nice balanced meal that is anything but boring!!

FALL WARDROBE WISH LIST

Now that Labor Day is officially behind us, I feel like I can really start focusing on all things Fall. That means I finally get to hang my mesh wreath, buy pumpkin flavored coffee and make my Fall clothing wish list!!

Sunday I did a bit of shopping but that only touched on what I want to add to my wardrobe for the Fall season. Being that it doesn’t start to cool off here for another 6 weeks or so I will have plenty of time to shop and gather up these pieces. Let’s hope they aren’t too hard to find!
